I've changed my e-mail address, and on my phone it still shows my old e-mail address, if i delete the account from my phone will i remove all the data as it says all data will be lost.
I've updated my i tues account and my i cloud on my pc to my e-mail address ?

It will only delete the information from your device not from iCloud.
When you delete the account you will be given the option to keep or delete the iCloud data from your device. Regardless of your choice, the data will remain in iCloud. Provided you are signing back into the same account, with just a changed ID name, your data will sync back to your device when you sign back in.
The only issue is photo stream photos. If you have any that are older than 30 days, be sure to save these to your camera roll before deleting the account or you will lose them. (Photo stream photos older than 30 days will not stream back to your device when you sign back in.)
