English subtitles changed to chinese characters in QuickTime 7

I enter my text file into a new Quicktime file and the subtitles show ok. When I save these text to text all the coding appears ok in english. After I merge the text track, however, some subtitles appear in Chinese (or Japanese). When I save again text to text, all the coding is gone and it shows one line of Japanese/Chinese characters.
