iTunes wont sync to any device!

So this has been happening since i updated my devices to ios7..

I go into iTunes and plug in my phone and ipad. The computer recognises these devices and backs them up. However, when i attempt to either add or remove music from these devices it says the device has synced and then i get stuck on the "waiting for changes to be applied" for about 5 minutes. When thats finished, i check either my phone or ipad and there is no difference. its getting quite frustrating. i really dont want to restore my phone or ipad, i have very very very important and meaningful text messages which i dont want to lose. In a few days ill be getting a new iphone 4s and i want my itunes fixed for this :l the current devices i use are iphone 4 and ipad mini, both of which are fully updated.ive already uninstalled and re downloaded itunes and no difference. please someone help.
