I recently added a second DVD drive to my new MacPro (mid-2012 version). How can I rename the DVD drive so that a different name appears in the dropdown from the Apple bar?

You cannot name an optical drive. OS X knows which is which. Unlike disk drives there is no place in an optical drive to store a drive name.
A different name will appear automatically -- and that name will be "Lower SuperDrive".
I bet you can guess the name of the other drive, which will change to be comparable.
You are correct that the name changes but it changes to a name that corresponds to the model and brand of the drive. I'd like to shorten the name. I'm not opposed to using Terminal or library files. I just don't know what to change (if I can).

If this is what you mean: , then you cannot change it. It's assigned by the OS from what's embedded in the drive's firmware.
