How can I explicitly choose a language in Pages 5.0?

This auto language detection is all very well, but sometimes a client needs a document written in American English. When I try to do this, the new version of pages auto-corrects the American spelling to British English spelling. The only way that I have found around this is the a**eache of doing a search and replace… changing the keyboard to the American version doesn't help, either…
