Q: posterizing
Can Aperture do posterizing? As an artist in training, my coursework requires I first change a photo to black/white and then 'posterize' it. There are some photo editing software that do it but I haven't found a good one for Mac. Since I already have Aperture I'd like to use that feature if it exists. I simply can't find it in the software unless it's under a different name.

Aperture has no built-in posterize. The "Curves" are a way to do it, but require a lot of work.
Quick and dirty effects are possible by using quartz filters that come built-in with MacOS X. You need to write Automator actions to access them, see my User Tip here:

The Toon-it! plug-in has many options to control posterizing, but it is not exactly a bargain prize. You can try the Demo mode for free, however.
