I see the presets in get info eq pull down on a song - but how do I create my own EQ on a song?

If you're using a MacBook Pro, you cannot change the EQ on individual songs. However, you can go to iTunes/Window/Equalizer and globally change the EQ.
Apple devices don't allow you to change EQ for individual songs.

Play the song and adjust the EQ as you want.
Save it as a Preset. Click the EQ dropdown and Make Preset.
Right click the song, Get Info.
Click the Options tab and set the Equalizer Preset to the setting you created.

You can.
You're right. On a MacBook or iMac, the last several versions of iTunes will allow you to customize EQ settings with several options.
The same options don't exist on an iPad or iPod, but the OP has a MBP. Good catch!

This has worked since at least iTunes 7.
Sadly, custom EQ does not transfer to iDevices.
