If you are not happy with the one in the store, you can either create what you want to be seen in not less than 16 pages or allow iTunes Producer to decide which chapter - which I never do!
Remember that the idea of a sample is allow potential readers to check a sample of the content.
When looking to purchase books online.. I always check the sample, if its not what I like.. I dont buy and if a book as no sample - how can I check if it suits me... so no sample= no purchase from me.
In a book shop I can pull a book off the shelf and read a sample, so why not the same with a digital book.
As an avoider, you could create your own Preview and have most of teh pages blank or just had your own description / comments or whatever you decide.
