Can people see my email address on iMessage?
if I send an iMessage to someone, who doesn't have me in their contact list will my email show up and will the people who have my name in their contact list see my email?

That would depend on how the user sending the iMessage has it setup on their device.
Settings > Messages > Send & Receive > Start New Conversations from...
What is this set to? If it is set to your email address, that is what they will see.
If the receiving user has you in their contacts, it will appears as whatever they have you entered as in their contacts.
