How do you eliminate a theme from an iDVD project?

You can't. But you can select a very simple theme, i.e. no drop zone or annimatiion and add an image of your design as the background, i.e. like a blank, black, jpg image file. If you don't want the play button to display you can set it to text and make the text color the same as the background color.

Another option is to make the DVD "autoplay" by choosing the flowchart view for your iDVD project, then dragging your video to the autoplay spot (the top or first position of the flowchart). Here are some instructions from Apple: http://support.apple.com/kb/ht1091
By doing this, the DVD will play automatically when inserted into a DVD player without showing a menu first. When the DVD is finished playing, it will return to the menu (or the black screen if you use OT's strategy.
