AirPlay is for streaming the iPad screen to an Apple TV or other devices. It's not a remote control system. There is a remote control app available, for controlling Keynote from another iOS device:

I don't believe that it can control more than a single device. I'm not aware of any way to remotely control Keynote on multiple iPads, though I could be wrong. If you want to share a presentation to multiple iPads, perhaps this would be worth a look:

or you could use AirView or a similar app to allow iPads to receive a screen sent via AirPlay.

    Regards.

The Keynote Remote app runs on an iPad (or iPhone) and controls a Keynote presentation running on a Mac.  I don't know if this is the way around JennBrock wants.  It's easy to make or break connections (it works like Bluetooth pairing).

You can connect one iPad to one Mac at a time.  While that connection is active, no other iPads or Macs can be part of that session.  I'm not sure how 'several iPads at one time' would work, anyway.  What would you want to happen if one person hit 'forward' at the same time as another hit 'back' ?

Yes, but it also will control Keynote on another iOS device. From the referenced article:

If you have an iOS device running Keynote, you can control your slideshow from another iOS device (in this example an iPhone and iPad are used).
