If I were to text someone through iMessage and it was to their email instead of phone number and they did the same with me, would we get charged international messaging?
I wouldn't think so since it's to email addresses and not the actual phone numbers

iMessage can only be used between iOS devices. iMessage uses data like email does anyway. The carrier is not involved in iMessage except if they provide data connection and only then they know you used data, but not what it was for. You would not be charged international messaging for an iMessage, even if between phone numbers.
