Really frustrating, I couldn't access iTunes on my iPod touch so I used my giftcard on my laptop, and when I connected my iPod to my laptop, I was unable to add the purchased music to my iPod.

Was there just a bad network conneciton that you had? Sometimes that is the issue. If you do gain access to iTunes via your iPod again, you can go to the iTunes Store App > more > purchased > music > and then 'Not on this iPod'
