Q: want to turn bluetooth off on ipod and can't find menu that allows

From your profile, it shows you have an iPod nano 4th generation. Bluetooth was offered with the 7th generation iPod nano. If you have this model, you can disable Bluetooth by selecting Settings > Bluetooth and toggle it off and on.
