i want to burn mp3s in alphabetical order without any folders onto a cd? why cant this be done - surley i should be able to click artists, they then go into alphabetiacal order then i should be able to simply burn the cd .. when i do this each track is in a seperate folder??

Use something other than iTunes, e.g. Nero, Roxio, Windows built-in CD writer tool, etc.

Once you click on Artists, you are going to get folders. To see how it works, check this document:
iTunes: How to set the play order of songs on an MP3 CD
Take your playlist sorted the way you want it, and drag all the songs into a new playlist. Burn the MP3 CD from your new playlist. You won't have the folders.

there is no "song" option..

Yup, when you drag them into a new playlist, they keep their order, but they "forget" why they were ordered that way.

Because you are sorting by Artist, not song title.
