I have read on this site that the back up is stored here Mac: ~/Library/Application Support/MobileSync/Backup/
but I cant see MobileSync in my list under Application Support. Has it changed recently?

No it hasn't. Are you sure that you found the correct folder?

The "~" represents your Home folder. If you don't see Library in your home folder, hold Option and click the Go menu.

Even though I thought that was exactly what I did, I just tried it again and it seems to be there in a much longer list. Who knows what I did wrong!!
One more question if I may, if I change the back up name to something recognisable does that matter?
You probably looked in the Root Library first and then in the Users Library where you found it.
