Go to the app stor,e at the bottom of the screen is purchased, tap it. Look for iBooks, if it's there download your old version.

This user found a way to get the Netflix app for iOS on an iPad 1 https://discussions.apple.com/thread/5753106?tstart=30

Same technique may work for the iBooks app.
