How do I upgrade my iPad from ios5.

Nothing I try is working. I need to upgrade my iOS from 5.1.1 to 6 or 7. When I go the traditional way through Settings, it only does an update and no option to upgrade. Most of the apps I need require iOS 6 or iOS 7. Any suggestions?
