Ipad for presentations with projector and Apple TV but without wifi??

There are some cables you can use. Depends on what model iPad you have and what interface is on the projector. You could also get a router to take with you and set up your wifi connection. There's some portable routers.

I just bought a handy presenation remote that works via bluetooth and compatible with Keynote with iPad connected to projector.

Satechi Bluetooth Smart Pointer .. so far works great in the office! will roll out to sales team next week.
