I'm thinking about gutting it out and keeping the G5 case, and building something that uses an intel processor.

Doing that will not give you the ability to run any version of Mac OS X legally.
And Apple's machines are very fine tuned. So no, you can't really do what you desire without risking overheating if you wanted to take the guts of another Mac and put them in the PowerMac's case.
I recommend that you sell the G5 and buy a new Mac.
