Move iTunes content from device to iTunes Match. "Undownload it"

Most of my iTunes content has been downloaded to my iPhone 4S taking up a lot of storage. How can I remove the songs from the phone and then access them through iTunes Match . The same for movies on an iPad? Remove them from device but have access later

You've subscribed to iTunes Match on your computer's iTunes and uploaded your music from there to it (you can't subscribe to it) and/or upload music from your phone) ? If you have then you should be able to turn on Match on your phone and then stream your music from there (so you will need to be online to play it)

For your films, whether they are available in the cloud depends upon what country that you are in (iTunes Match is only for music) - films (and/or TV programmes) can't be redownloaded in all countries, and not all film studios have agreed to allow redownloading, and there is no guarantee that any film will remain in a country's store for future redownloading (you shouldn't rely on being able to redownload any item from the store).
