is there a way to delect the ibooks i already read i want to remove them from icloud and ibooks

The books are not actually in your iCloud storage, they are links to the books in the Store. What you are seeing is your purchase history and as such cannot be deleted.

You can however hide your purchases, which you can do from the QuickLinks > Purchased option from the main page in the iTunes Store on your computer.

You can also hide all your purchases in the cloud by going settings > iBooks > Show all purchases >off.

Thanks for this! I didn't see the "Show All Purchases" option, but I was able to click on the X in the top corner and remove the items I had finished reading and no longer wanted to see.
