I used to be able to, before the update. I know I can do access it in the Control Panel, but it was always convenient to do it from iTunes when I'm listening to tunes through my stereo from my iPhone 5s. Thanks.

Do you mean the Music app on your phone? iTunes (on your computer) doesn't use AirPlay.
iOS 7 has the AirPlay control only in Control Center.

Jan 27, 2014 3:03 PM in response to modular747by soundzz,Yes, I meant the iTunes app on my iPhone. So, basically, iOS 7 took away that valuable (for me, anyway) feature. Disappointing since you can find it in other music apps like Spotify and Daytrotter and XM Radio.

No, you mean the MUSIC APP on the phone. There is no "iTunes App." The iTunes Store app is for purchasing, not playing music.
It's faster and easier to to use Control Center for AirPlay.

Jan 27, 2014 3:23 PM in response to modular747by soundzz,Sorry. Yes, the MUSIC APP. But unless I'm missing something, it is not "easier" to use Control Center. It's just another way to use Airplay. When I'm in my music apps (is it okay to use that term when describing music apps in general?) like Spotify and I want to switch from my stereo to my phone when listening I now have to leave the Apple Music App page, go to the Home Page and swipe up to select the Airplay. Add up those steps to going back to Music App page and it's taken five steps. If the Airplay icon was on the Music App page then I can quickly select it and change the Airplay setting without leaving the app. Isn't that correct? Thanks for your help.

Incorrect. You can access Control Center from within the Music app - no need to close it.
Settings > Control Center > Access Within Apps > ON
