I bought iTunes Match yesterday and now i've decided that I don't want it. How can I delete it/unsubscribe?

You will need to try contacting iTunes support if you want a refund : http://www.apple.com/support/itunes/contact/- click on Contact iTunes Store Support on the right-hand side of the page, then Purchases, Billing & Redemption
