I write primarily in English, but I include words, phrases, and information that are sometimes written in another language. How do I select a word or block of text and change the language just for that section?

It is supposed to happen automatically in Pages 5, but is not absolutely reliable and works paragraph by paragraph.
In Pages '09 you can select and format the language directly.

Just to clarify if I may: so there is no way to highlight one word in a sentence and change it to Spanish while the rest of the sentence remains in English? Second question: can I "downgrade" to Pages 09?
Not that I know of in Pages 5.
Pages '09 should still be in your Applications/iWork folder.
Trash/archive Pages 5 after Exporting any files to Pages '09, then rate/review Pages 5 in the App Store.
