Pages can store your documents two ways: on your drive, or using the Cloud. You can also view documents with a backup, if you back up your data.

I don't know where you store your data. However, by default, Pages saves things in the Documents Folder.

Use Spotlight (Command-space) to search for individual documents. You might find your documents in that folder.

You really should provide some other details. Do you use iCloud with Pages? Do you use file sharing with iTunes? There is no magical process to retrieve lost documents, photos, data, etc. on your iPad. There is a method to how it all works and without more information from you, it's difficult to know where to start.

If you are using iCloud with Pages, the documents should download to the iPad when you launch Pages after you updated it. If you use File Sharing with iTunes, copy them back to the iPad from iTunes. If you backup with iTunes or iCloud, you should be able to retrieve the documents by restoring form a backup.
