how to update 2nd gen ipod touch ios

I also would like to upgrade the iOS on my third generation iPod Touch, but I have found that version 5.1.1 is the highest it will go. What a bummer. While I am satisfied with the Apple product I own, I wish I could upgrade the operating system to iOS 7.
