How do I transfer apps and info from my iPhone 4S to my iPhone 5s?

I am trying to transfer my apps and data from my Iphone4S to my iPhone 5s and then leave the 4s empty so I can pass it onto my daughter. Do I need to put my old sim card into the 4S and then back up to Itunes and then move stuff across? Do I then remove the old 4s from my Itunes??

iPhone 5s, iOS 7.0.4
