I produced a video for a brewery to use on its tours. I need to get it to DVD, source footage was shot in standard def. The brewery's TV is high def.
Is there a particular compressor setting I should use to maintain video image quality for the DVD?
DVD's are not High Def. Nothing you can do about that. If they can use blu-ray that's different, but you'll either have to have someone else do it or get a blu-ray player.
for best quality on the dvd, make sure everything is NOT rendered in your sequence and file: send to compressor and in compressor use the appropriate dvd preset.

In Compressor use the Highest Quality (MPEG-2) DVD settings appropriate for the length of your video.
and then author in DVDSP. If you don't know how to do this, do a little searching here. I think Shane or someone else has a link to a very cimple workflow for this. If you can't find it, post back and I'll find the link
I know how to do the authoring, but it wouldn't hurt to see the links.
The first DVD I produced for this was done using 90 best quality 2 pass setting in compressor. Is there a higher setting I can use?

You can duplicate the preset and then alter the settings of the copy; tweaking the bit rate upward will help improve quality as long as you don't exceed the maximum allowed or exceed the available disc space.

The simple way would be to delete the render files for that project.

if you up the bit rate beyond the preset, be sure and test the dvd on a variety of players. Although all dvd players are supposed to play all dvd's that are within specs, the fact is that cheap dvd players and particularly pc software players may choke on dvd's with a high bitrate.
I usually don't exceed 8.2Mbps for the video portion of a DVD.
