removing fonts

I'm having font problems with InDesign CS5. I used Font Book to turn off practically everything, but the incorrect font substitution persists. When I looked in the Fonts folder in my Library, I saw that many nonessential fonts are still there.

I suspsect that these extras were added manually, at times when they didn't show up in one app or another. Where can I find a list of the ones I can take out without breaking the system?
