Hello annion,

Turning Dictation on or off; setting Dictation preferences:

1. Choose Apple () > System Preferences.

2. From the View menu, choose Dictation & Speech.

3. Click "On" to turn Dictation on, or "Off" to turn it off.

To use Dictation in an OS X app, simply follow these steps:

1. Select a text field.

2. Press the fn (Function) key twice, or choose Edit > Start Dictation.

3. Dictate (speak) what you want to have inserted into the text field.

4. When finished, click Done or press the fn key again. Your spoken words then appear in the text field.

In this Apple article, Mac Basics: Dictation lets you speak text instead of typing, you will find a link to the voice commands you can use. Beats guessing. You might want to consider Enhanced Dictation. Instead of your words transmitted to Apple servers for recognition and return to your document, you can have this done locally on your Mac. The tradeoff if any is that Apple Servers will be kept current with advances in voice recognition software, at the price of more lag, and an Internet access requirement.

And amusingly, for those that miss auto-capitalization of sentences in Pages v5, the voice dictation gets it right.
