unable to define incoming mail server in account preferences for mail app

Using Mail Application on my iMac and am unable to define incoming mail server because the option is greyed out but unable to save my account login preferences because it cannot be left blank?

How do I set this up?

It seems to show my new mail ok but unable to send email.

This was working fine a few days ago.
