If you have an iPhone 5, Siri software is built into your phone. Siri does, however, require a data connection to work. The iPhone is not a powerful enough computer to support natural language processing on its own. If you don't have an internet connection, you can turn Siri off and use VoiceControl.

Some BT headsets also have their own built in voice dialing feature.

Talking on a cell phone while driving is just as dangerous if you're using a head set as if you were not. To be safe, don't do it.

Best of luck.

However, functions like messaging and dialling a number can be done manually, like all phones.

You cannot do speech-to-text without an internet connection. You can voice dial using Voice Control without an internet connection if Siri is turned off.

Siri needs WiFi to work, it is built in (like Safari).

No, Siri needs a data connection. That can be either WiFi or cellular.

You also need to check your Bluetooth to see if it supports accessing Siri, or if it does the phone dialing all by itself. Mine will do both. I tap the Bluetooth's button, tell it to dial a number and done. If I want to use Siri, I give it the command to access the phone, and it gives me Siri. I can call, text, respond to text, do anything I can do with Siri. I do have a cellular data connection at the time, however.
