Reinstalling server, how to save user data?

A couple of odd things are going on so rather than fix what I don't rally understand it may be easier to just reinstall OS X and OS X Server on my Mac.


I don't have a large number of users, the server is mostly used as a file server with VPN connections. One or two users do have email accounts running via IMAP on the server though. What's the best and or easiest way to save that email so the user can carry on as normal once I've reinstalled?

By the way, the "odd things" refer to user authentication, one can't get a VPN connection, another trouble connecting from the LAN. Open Directory is complex so rather learn it all...
