Do you have a question about changing it ? Are you wanting to update the info on your account or log out of an account and log in with a different account ?

If you want to change info on it then you can change some info by tapping on it in Settings > iTunes & App Store on your phone and logging into it, or via the Store > View Account menu option on your computer's iTunes. You can update other info (alternate email addresses, rescue email address) via http://appleid.apple.com

If you want to log out of your account on your phone then tap on it in Settings > iTunes & App Store and sign out, and you can then log in with a different account

These are user-to-user forums, it's not a good idea to post email addresses (unless you like spam emails).

If you log into your account via, for example, http://appleid.apple.com, do you have the option to edit (i.e. delete and replace) that address ? If you can then you will need to see if the address that you want to use is available and create it - you can't edit/change the actual email address, you can only potentially replace it with a new address.
