Is it possible to request a delivery and/or read receipt for emails? I can't find any information on this and it is really frustrating. If it's not possible, MAJOR disappointment with Apple!

Even if you sent me an email with a read receipt, I would not acknowledge it. If the content of the email is that important, send it via a traceable method (USPS, FedEx, UPS); if it is not, it is no one's business if or when i read it.
Most email systems don't respond to read/receipt requests anyway, so even if you do request a read receipt it's unlikely you would get anything back even if the recipient opens the email.
The only email system I know of were you can enforce read receipts is IBM Notes (formerly Lotus Notes).
