Try logging out of your account on your iPad by tapping on your id in Settings > iTunes & App Store and then log back in and see if the store apps then connect to the store ok.

If they don't then try closing the App Store app via the multitasking bar and see if it works when you re-open it : double-click the home button to open the taskbar, and then swipe or drag the App Store app's screen from there up and off the top of the screen to close it, and click the home button to close the taskbar.

If that doesn't fix either then try a soft-reset : press and hold both the sleep and home buttons for about 10 to 15 seconds (ignore the red slider), after which the Apple logo should appear - you won't lose any content, it's the iPad equivalent of a reboot.

In terms of your post's title about gift cards, if the card has been redeemed then its remaining amount should be on your account, the card itself is now effectively zero. On my iOS devices my balance shows at the bottom of, for example, the Featured tab in the App Store app under my account id (or you can view your account via Settings > iTunes & App Stores and it should show on the screen that you are taken to). It might not show if your balance is zero.
