Ryan,

Is there a shortcut for adjust or mute volume on a selected clip?

Yes. Just select the clip and then, while in timeline view, click the clip volume control and adjust the volume slider downward to zero.

This control is located at the bottom of he iMovie window, just to the right of the timeline zoom control.

You can also type "0" in the percentage field.
