I have an iPhone 5S (running iOS 7.0.5), but when trying to read the Yellow Submarine interactive book in iBooks, it briefly opens up, but crashes within 3-5 seconds, going back to my desktop screen!.
Can anyone please help me?

If that specific book is causing issues in iBooks, but other books are opening without issue, you may want to try deleting the file and redownloading just to confirm that it isn't a corrupted file. You may find the following article helpful:
