How to backup iPod on new iTunes Version

I have an older 5th generation iPod that when attached to iTunes 11 does not show option to backup anymore? Where is that feature?

Part two of my question, as I just purchased a new iPod Classic (160g) and that too DOES NOT have the option to backup. What happened to the backup feature? (Using an iMac as primary computer).
