In the application "Mail" select the mailbox you want to archive, then select the menu item "Mailbox > Export…" then choose where to store the exported mailbox.

when I export the archived mailbox - it creates 3 documents: info.plist; mbox and table of contents-all of which I cannot open and read-How do i keep it in a format that is readable?
you would have to import them back to mail using the menu item "File > Import Mailboxes…"
Can you describe what you want to do? I assumed that you wanted to archive the emails (since you wanted to burn to a CD). Since you also want them readable Is there some other "thing" you want to do with the CD?
