Ipad 2 version 7.0.4 asks to upgrade iTunes to 11.1, how do I do it
When backing up iPad it asks for iTunes 11.1 how do I get it

The message is referring to the version of iTunes that you have installed on your computer.
You will need to update your Mac to be able to download and install it - see my reply on your other post : https://discussions.apple.com/thread/5337389?answerId=24920927022#24920927022
An iPad with iOS 7 on it needs OS X 10.6.8+ on your Mac, and iTunes 11.1 also requires 10.6.8+
