Because booting the new MacBook Air requires a specific set of drivers, and Mac OS X 10.6.8 doesn't contain those drivers.

There is no way, except as mentioned earlier. For as long as I remember Mac computers have always required the minimum system version that came with the computer.
If you need Snow Leopard you should look for a used computer.

Thank you -- I just purchased Snow Leopard Server and it should be arriving in the next few days. I wanted to be sure I could run my favorite applications before purchasing a new Macbook Air.
Buy enough RAM to in the Air to support both SnowLeopard and Mavericks running at the same time.
