Assuming you have a thunderbolt or at least mini display port on your Mac, use a mini DP to DP cable to get full resolution
you could try to option+click on "scale" to find out more options.
but i fear that won't solve the problem, at least this is my experience as I am in the same situation
It seems to be a problem of Mavericks. (Lion worked perfectly with the maximum resolution
Both my MBP and MacMini can't get 2560x1440 on the U2711. And yes @turbostar - with mini DP to DP.
All those work-arounds (reset PRAM, overwrite the overrides ...) don't help. So very, very VERY frustrating.
So if any ouf you finds the solution. please post here.

I found it to be the only way I could get 2560x1600 from my second 30" monitor that runs through HDMI. They have a trial.
It's a bit fiddly to use. After choosing a suitable resolution you must "Save" the setting, then reboot.
HDMI is the problem.
Connect via DVI or DP.
Mac considers HDMI to be a TV so you get offered TV resolutions

same monitor here, mDP to DP cable works just fine
same machine, you tried a mDP to DP cable (not adapters) and had the same issue?

No, he didn't because if he had it would have worked.
MDP and DP are same thing with different packaging.
HDMI only supports up to 1080p/1920x1080 (unless it's the very very newest spec).
The connectors that support the entire resolution of that class of monitor are
DisplayPort
Mini DisplayPort
DVI (Dual-Link)
But not DVI (Single-Link) or current HDMI.
Hi Network 23, I run a Dell 30" U3104 at 2560x1600 straight from the HDMI port on my nMP to the DVI port on the monitor through a HDMI/DVI cable.
The other 30" is from the mini DVI port on the nMP to the DVI port on the monitor with that $100 adapter thing.
Bottom line is that high resolution is possible through HDMI, through SwitchResX.
