Unwanted generic photos on messages sent

How do I get rid if the dumb generic picture on the messages I send in Mail 7.1? I never wanted a photo; the thing just appeared! I just downloaded O.S.10.9.1 yesterday and it seems like a real backward step in so many ways.

MacBook Pro, OS X Mavericks (10.9.1)

Mail menu -> Preferences -> Composing. Send as Plain Text. Rich Text is not as widely supported as it should be anyway. It is better to send attachments only as Windows compatible with the attachment toolbar icon (a paperclip)'s attachment dialog as needed when the recipient's machine is unknown. You can add that toolbar icon with view menu -> Customize toolbar.
