The following has instructions for moving photos from the iPhone to a computer. It is not a sync. I don't believe that your album categorization will be preserved. http://support.apple.com/kb/ht4083

Once the photos are safely on the computer (copied to a place outside of the Photo Stream folder if you imported using Photo Stream) you can delete them from the Camera Roll to free up space. If you then want to return some to the phone from the computer you can do that using iTunes sync. That "sync" is essentially a one-way process and each time you do it, the non-Camera Roll photos on the phone are set to match the current iTunes Photo pages settings. If you are syncing from a computer folder, if you set up a main folder and then organize your photos into subfolders and put the subfolders in the main folder on your computer, they will display as separate albums on the phone. The following has instructions for iTunes Photo sync. http://support.apple.com/kb/HT4236
