I began updating my Apple TV and it has been preparing the update for over a day. It appears to be stuck and no controls on the remote are functioining.
Any suggestions?
Should I unplug and start over?

That is far too long.
The update may have failed - AppleTV may not restart properly.
You may need to restore via iTunes:
