How do I change my iCloud email address?
I want to change the email address that is given with iCloud (not the one I use to sign in as my AppleID).
Alternately, is it possible to add addresses?

Once you create and iCloud email address it cannot be changed without creating an entirely new account. You can, however, create a new alias address to use that will receive email in your existing iCloud inbox. Is iCloud mail an OSX only thing? I'm not seeing anything like it on my iPad running iOS 7.06. Mail doesn't seem to be accessible via safari. (I know it's not your fault, but the iPad is supposed to be a standalone device, and I continue to run into situations where an Apple service or feature is crippled on the iPad.)
You can add your iCloud email account by going to Settings>iCloud, signing in with your iCloud credentials, then turn Mail on. If you want to view icloud.com from your iPad you'll need to use a different browser to do so as the built-in Safari app doesn't support JavaScript. You can use iCabMobile Web Browser on your iPad (available in the App store) and set Browser ID in the app's settingsto Safari (Mac).
Ok, I'm going to try this with a different browser. I think what I am trying to do at this point is add an alias.

Icab got me to the login screen and to the iCloud web mail, but . . .
iCloud really doesn't like the touch interface. The settings gear didn't respond to touch at all.
I'm going to play around with agent strings and see if that helps. The above result was from spoofing safari 6 on the Mac.
I see what you mean. Haven't needed to play around with settings in icloud.com using my iPad before. Let me know if you find settings changes that help with that.
