setting>phone>my number and change the number to your number (not the number from your sim)
Then go to settings>iMessage> turn iMessage off and then turn it back on again...the number that was greyed out will now be available to deselect! I then turned iMessage off again then back on and the number wasn't there. Do the same with FaceTime.
Just realised this post was from feb so you've probs already sorted it but it might be useful for others!

I have the same problem and haven't been able to resolve it. My number briefly shows up on screen while logging to my icloud account, but as soon as I go back to mani messages screen it says "waiting for activation..." and "You can be reached by imssage at" is showing wrong (old) number.

Go to settings on iphone down to phone icon
My number change number to correct one.
