how works the new zoom safari?

I'm unable to set a default zoom in safari 7, all metods I knwo, as extensions, css or cmd+ ends in a wrong safari conntent layout.

many pages have this problem as this for example, try zoom in with the avobe metods and check the map pins:

The only way to zoom in in safari is with a magic trackpad!!

pinch in/out handles the zoom as in the old days. but this is so annoying!!

any help to set a default zoom in a working way?
